BRAZILIAN FEYOADA RICE

INGREDIENTS


3 tbsp oil
1 1/2 c long-grain rice
1 onion, peeled - thinly sliced
2 tomatoes, peeled, - seeded and chopped
2 green chili peppers - seeded and chopped
1 1/2 c vegtable broth
2/3 c golden raisins
1 1/2 tsp salt

WHAT TO DO::

heat oil in med skillet. add rice and onion, cook over very low heat for 10 min.
stir in tomatoes and green chili peppers. pour in vegtable broth, slowly, to avoid spattering. stir in raisins and salt. bring rice to a boil, lower heat and cook for 20-25 min.
