WHOLE WHEAT TURNOVERS

INGREDIENTS

dough
1 1/2 cups whole wheat flour
1/4 cup canola oil
salt
a little water to link

hearts of palm filling
2 tablespoons oil
2 tablespoons flour
2 tablespoons finely chopped onion
1/2 cup milk
1 teaspoon chopped parsley
pinch nutmeg
salt and freshly ground white pepper - to taste
1 cup hearts of palms - chopped

cheese filling
1 cup firm ricotta or farmers cheese
1/4 cup chopped spring onions
1 egg
salt and white pepper - to taste

WHAT TO DO::

dough:
1. place flour in a bowl.
2. make a well in the center and add oil, salt and a little warm water.
3. stir with a fork and then with hands. you should have a firm, not too soft, dough.
4. knead 5 minutes adding more flour if needed. let rest covered and basted with oil, 30 minutes.
5. roll out dough very thin on a working surface dusted with whole wheat flour.
6. cut out 4" rounds. place 2 t filling in the center, baste edges with water, fold in 2 over filling and press edges together with a fork to stick.
7. place turnovers on a lightly oiled cookie sheet.
8. bake in a pre heated 350 oven for 25 to 30 minutes

heart of palms filling:
1. cook onion in oil
2. stir in flour and cook 2 minutes
3. remove from heat. let stand 5 minutes.
4. add milk and stir over low heat until thick.
5. season with salt and pepper. stir in chopped hearts of palms and parsley. let cool. before using

cheese filling:
stir together all the ingredients.
you can make mushroom filling, chicken and so on.
