CHICKEN SATAY NOODLES - serves 2 - double up quantities for
more!
INGREDIENTS
2 chicken breasts
mini sweetcorns - like 6-8
carrot - one
spring onions (3 biggies)
egg noodles (pre-cooked)
Marinade:
1tsp cumin
1tsp corriander
1tsp turmeric
Satay Sauce:
1/4 cup - peanut butter
1/4 cup - chicken stock
1/4 cup - cream coconut
1/2 tbsp - soy
1/2 tbsp - sweet chilli sauce
1/2 tbsp - brown sugar
WHAT TO DO::
coat yer chicky in the above spices (cumin, corriander, turmeric)
then you fry the chicken (in spices) till browny/cooked... remove from pan and cover
fry the carrot, spring onions and sweetcornies till tender-ish (in same pan that you used
for the chicky)
stir in the pre-cooked noodlesl, chicken, and satay sauce.
mix together lightly for a bit... then serve with fresh corriander... goood lord! its
lovely!
